| Ingredients |
| 3 medium baking potatoes (1 pound), such as russet, round white, or yellow |
| 2 tablespoons margarine or butter |
| 2-4 tablespoons plain soymilk |
| 1/4 c plus 1 T tahini (sesame seed paste) |
| 1/4 c fresh lemon juice |
| 3 T water |
Start to finish: 35 minutes
1. Peel and quarter potatoes
2. Cook, covered, in a small amount of boiling lightly salted water for 20-25 minutes or till tender; drain
3. Mash with a potato masher or beat with an electric mixer on low speed.
4. Add margarine or butter.
5. Season to taste with salt and pepper.
6. Gradually beat in enough milk to make light and fluffy.
Makes 4 servings.
