Henry Ford Chocolate
Chip Soynut Cookies

   
Ingredients
3 cups light brown sugar
2 cups margarine, softened
4 large eggs
3 cups all-purpose flour
1 cup soy flour
1 teaspoon salt
2 teaspoons baking soda
2 tablespoons plain soy milk
1 teaspoon vanilla
2 cups roasted unsalted hulled soynuts, crushed
4 cups semi-sweet chocolate morsels

Preheat oven to 350 degrees.

In a large mixing bowl, cream brown sugar and margarine with electric mixer for 2 minutes.

Add eggs one at a time and beat until light and fluffy.

In a large bowl, combine dry ingredients and add to sugar mixture.

Beat in soy milk and vanilla.

Stir in soynuts and chocolate chips.

Spray baking sheets with non-stick vegetable coating. Drop cookie batter onto sheets with a teaspoon.

Bake for 8-10 minutes. Makes approximately 10 dozen cookies.
